Primitivo di Manduria

The Protected Designation of Origin "Primitivo di Manduria" refers to a red wine, also produced in the variant Riserva.


Grapes

According to the product specification, the vinification of the Primitivo di Manduria, both in the basic version and in the Riserva version, requires the use of grapes from vineyards made up of at least 85% of Primitivo grapes. The remaining portion, which must not exceed 15%, may consist of other non-aromatic black grapes suitable for cultivation in the provinces of Brindisi and Taranto.


Physicochemical and Organoleptic properties

The basic version of Primitivo di Manduria has an intense red aspect, which tends to turn garnet as it ages. The aroma is full and complex, accompanied by a characteristic taste, ranging from dry to sweet. The minimum total alcoholic strength by volume is 13.5% vol. In the Riserva variant, on the other hand, the color becomes intense red, enriched by nuances that tend to garnet. The aroma is full and complex, with the possible addition of hints of plum. The taste is velvety and full-bodied and always ranges from dry to sweet. The minimum total alcoholic strength by volume is 14% vol.


Grape production area

Primitivo di Manduria is produced in an area that, in terms of landscape and environment, has two souls: the Ionic Arch and the Salento peninsula.


Specificity and historical notes

The reasons for the success of Primitivo di Manduria are to be attributed to Don Filippo Indelicati who, at the end of 1700, selected it among all the species in his cultivations. The name "Primitivo" indicates its main characteristic: the precociousness in the maturation.
