Delia Nivolelli

The Protected Designation of Origin "Delia Nivolelli"; is necessarily accompanied by one of the following indications, which identify a specific type of wine: Chardonnay, Damaschino, Grecanico, Grillo, Inzolia, Muller Thurgau, Sauvignon, Nero d'Avola, Merlot, Pignatello or Perricone, Sangiovese, Syrah, white, red, spumante and novello 


Grapes

Delia Nivolelli Bianco is produced from 65% Grecanico, Inzolia and Grillo grapes (alone or in combination). In Rosso, on the other hand, the 65% base is composed of Nero d'Avola, Pignatello or Perricone, Merlot, Cabernet Sauvignon, Syrah and Sangiovese (also in this case, alone or in combination). In the production of spumante, on the other hand, at least 85% of the grapes used must be from Grecanico, Chardonnay, Inzolia, Damaschino and Grillo. The percentage of single-varietal grapes required is always 85% when this is indicated on the label. In addition, in all the wines of the denomination, it is possible to use, in competition and within the limits of the quotas provided for, other grape varieties of similar color, suitable for cultivation in Sicilia


Physicochemical and Organoleptic properties

The white wine (minimum total alcoholic strength by volume 11% vol. ) is straw yellow, with variable intensity and greenish reflections; the aroma is delicate and characteristic, more or less fruity; the taste is dry and harmonious. The spumante (11. 5% vol. ) is also straw-coloured, with a fine, lively and persistent froth, a delicate aroma and a fresh and harmonious flavour, as well as being savoury. The Rosso (11. 5% vol. ), on the other hand, has a pleasant red hue that is enriched with orange reflections with ageing; the aroma is vinous, accompanied by a delicate perfume; the flavour is dry, savoury, warm, harmonious and rightly tannic (more velvety as it ages). In the Novello variant, the aroma becomes fruity and the taste soft, slightly acidic and sometimes lively. Further peculiarities, traceable in the specification, are shown by the wines with indication of grape variety. 


Grape production area

The production area lies between the Mediterranean and the territories of Salemi and Trapani. 


Specificity and historical notes

Historically, wine production in the Delia Novelli area dates back to the Norman period.
