Biferno

The Protected Designation of Origin "Biferno" includes the following types of wine: red, rosé, white, riserva red and Superiore red.


Grapes

The red, riserva, superiore and rosé wines are composed of a minimum of 70% to a maximum of 80% of Montepulciano, and a minimum of 10% to a maximum of 20% of Aglianico; grapes from other black grapes may also be used, up to a maximum of 20%. The white wine, on the other hand, has a share of 70% to 80% of Trebbiano Toscano, with which grapes from other white grapes are used for a percentage that varies from 20% to 30%.


Physicochemical and Organoleptic properties

The basic red wine (minimum total alcoholic strength by volume of 11. 5% vol. ) has a more or less intense ruby colour, with garnet reflections when aged, a pleasant, characteristic aroma, with an ethereal aroma when aged, and a dry, harmonious and velvety flavour. The rosé (11,50% vol) has a more or less intense pink color, the smell is fruity and delicate, the flavor is dry, harmonious and fruity. The superiore red (12,50% vol) has an intense ruby color, with garnet reflections as it ages, the smell is pleasant, intense and ethereal. The Riserva version (13% vol), on the other hand, has a more or less intense ruby red colour, with garnet highlights, a pleasant and full aroma and a robust, dry, harmonious and velvety flavour. Finally, the white wine (10. 5% vol. ) has a straw-yellow color with greenish reflections, the smell is pleasant, delicate and slightly aromatic, the taste is dry and harmonious.


Grape production area

The production area goes from mountain to hilly, the soils are made up of a diversified lithology, with calcareous marl, arenaceous and marl-arenaceous formations, which give rise to diversified soils.


Specificity and historical notes

Viticulture in the Biferno area has very ancient origins, even before the Greek age. The particular changing morphology of the territory, combined with the diversified pedology of the area, contribute to creating a product of high value.
