Soave

The protected designation of origin "Soave" includes the white wine of the same name, as well as its sparkling version and the productions with an indication of the Classico and Colli Scaligeri subzones.


Grapes

Soave wines are produced from grapes coming from vineyards composed of Garganega (minimum 70%), Trebbiano di Soave and Chardonnay vines (no more than 30%, alone or in combination). In the 30% quota, however, it is also possible to include, up to a maximum of 5%, other white grapes, non-aromatic, suitable for cultivation in the province of Verona.


Physicochemical and Organoleptic properties

The "Soave" wine, also in its Classico and Colli Scaligeri variants, has a straw yellow aspect that can tend to greenish. The smell it releases is characteristic, with an intense and delicate perfume, and is combined with a medium-bodied, dry, harmonious and slightly bitter taste. The minimum total alcoholic strength by volume ranges from 10.5% vol. of the basic version to 11% vol. of the wines with mention of sub-area. Similar organoleptic characteristics can also be found in the Spumante (11% vol.), produced in the extra brut, brut, extra dry or dry versions; it differs only in the greater brilliance of its colouring, which is also enhanced by the presence of a fine and persistent foam.


Grape production area

The area of production of Soave D.O.C. wines is included in the central-western part of Monti Lessini region, near the point of immersion in the Pianura Padana.


Specificity and historical notes

Already in Roman times, the area of Soave wines was known for the particular intensity of wine production, a characteristic still present today. Over the years, the abundance of crops has been added to an increase in quality that has helped to make the local production renowned.
