Bianco di Pitigliano

The Protected Designation of Origin "Bianco di Pitigliano" includes four different types of wines: basic white, Superiore, Spumante and Vin Santo.


Grapes

The base, Superiore and Spumante wines are made up of 40% to 100% Trebbiano, 0% to 60% Greco, Malvasia bianca lunga, Verdello, Grechetto, Ansonica, Chardonnay, Sauvignon, Viognier, Pinot bianco and Riesling italico, both absolute and combined. A maximum of 15% of grapes from similarly coloured berry varieties may also be used. Vin Santo is composed of 40% to 100% Trebbiano, and 0% to 60% Greco, Malvasia bianca lunga, Verdello, Grechetto, Ansonica, Chardonnay, Sauvignon, Viognier, Pinot bianco and Riesling italico (absolute or combined). In addition, grapes from similarly colored berry varieties may be added up to a maximum of 15%.


Physicochemical and Organoleptic properties

The basic white (vol. 11%) has a more or less intense straw yellow colour, the aroma is fine and delicate, the taste is dry, fresh, with a slightly bitterish background, of medium body. The Superiore (12% vol.), on the other hand, has a more or less intense straw yellow colour, a fine and delicate aroma and a dry, fresh, lively, medium-bodied and soft flavour. The Spumante (vol. 11,5%) has a fine and persistent foam, the color is straw yellow with greenish reflections, the smell is delicate, the taste is from zero to dry, lively, acidulous and slightly bitterish. Finally, Vin Santo (vol. 16%) instead has a color from straw, amber to brown, the smell is ethereal and warm, the flavor goes from dry to sweet, harmonious, velvety with more roundness for the lovable.


Grape production area

The production area for "Bianco di Pitigliano" ranges from the hills to the foothills on soils ranging from those characterised by the presence of sediments of volcanic origin, to those found on marble formations, closer to the river Fiora and included in the municipalities of Pitigliano, Sorano and part of the municipality of Manciano in the province of Grosseto.


Specificity and historical notes

The wine-growing tradition in the "Bianco di Pitigliano" area has its roots in time, dating back to the Etruscan, Greek and Roman ages. The ancient tradition, the changing pedology and orography combine to create a high quality product, such as the "Bianco di Pitigliano".
