The Protected Designation of Origin "Buttafuoco dell'Oltrepò Pavese" includes two types of wine: basic red and sparkling.
Grapes
The red wines, both the basic and sparkling versions, are composed of 25% to 65% Barbera and 25% to 65% Croatina, also have up to a maximum of 45% Uva Rara and Ughetta, present absolute or combined.
Physicochemical and Organoleptic properties
The basic red (12% vol.) has a characteristic bright red colour, more or less intense, the aroma is vinous and intense, the taste is dry and full-bodied. The sparkling version (12% vol.), has a lively and evanescent foam, but retains the same characteristics in the color, being bright red more or less intense, the smell is winy and intense, the flavor is dry and full-bodied.
Grape production area
The production area of "Buttafuoco dell'Oltrepò Pavese" is hilly, the lithology is varied, with portions of land characterized by the presence of alluvial deposits, other conglomerates and others with a more arenaceous composition, which give rise to an equally varied pedology.
Specificity and historical notes
The particular geographical position of the wine production area, south of Lombardia, known to be the meeting point of four regions: Lombardia, Piemonte, Liguria and Emilia Romagna, makes it rich in different and varied cultural experiences, since the first century BC. Together with this, the particular pedology and the hilly orography combine to make the "Buttafuoco Dell'oltre Po' Pavese" a product of high value.
