Canavese

"Canavese" is a Protected Designation of Origin (PDO) recognized for a wide range of wines produced in Piemonte. It includes: red, new red, pink, pink sparkling wine, white, white sparkling wine, Barbera and Nebbiolo.


Grapes

As well as the types, also the relative production is rather diversified. The Canavese white wines, also sparkling, are produced in purity with 100% grapes from the Erbaluce vine. Reds and rosés, on the other hand, are composed of at least 60% of grapes from Nebbiolo, Barbera, Uva Rara, Bonarda Freisa and Neretto vines, which can be used individually or in combination. Finally, Canavese Nebbiolo and Canavese Barbera must contain at least 85% of grapes from the relevant vine and the remaining 15% from other similarly coloured grape varieties grown in Piemonte.


Physicochemical and Organoleptic properties

The Red (minimum total alcoholic strength by volume of 10.5% vol.) is ruby red in colour, dry and with good acidity, savoury and winy (except for Novello). The Rosato (10.5% vol.) is light ruby red in colour, with a delicate flavour and pleasant on the palate. The Sparkling Wine variant (11% vol.), has a light and evanescent froth and a fresh and fruity taste, ranging from brut to extradry. The White (10% vol.) is straw yellow, with a fruity aroma, excellent structure and good acidity. In the sparkling version, with a light and evanescent froth, it has a lighter shade and a fruity and fresh flavour, from brut to extradry. Barbera (10.5% vol.) is an intense ruby red colour, slightly fruity and full-bodied. Finally, Nebbiolo (11% vol.) appears to be ruby to garnet in colour, full-bodied and suitable for ageing.


Grape production area

The production area is located in the north of Piemonte, on the border with the Valle d'Aosta, in the provinces of Torino and Vercelli.


Specificity and historical notes

The mild temperature and the richness of nutrients in the soil give Canavese wines remarkable characteristics: excellent acidity, good flavor, low polyphenolic content.
