Colli Cimini

The Protected Geographical Indication "Colli Cimini" includes three types of wine: white, also in the sparkling variants, novello, passito, vendemmia tardina; red, also in the sparkling variants and novello; rosé, also in the sparkling version.


Grapes

Colli Cimini PGI wines must be obtained from grapes coming from vineyards composed of one or more of the vines suitable for cultivation in the Lazio Region. The IGP "Colli Cimini" with the specification of one of the vines suitable for cultivation for the Lazio Region is reserved for wines made from grapes from vineyards consisting of at least 85% of the corresponding vines. Grapes from other grape varieties suitable for cultivation in the Lazio Region may contribute to the production, up to a maximum of 15%.


Physicochemical and Organoleptic properties

White PGI wines have a yellow colour with a fruity odour and a flavour that ranges from dry to sweet, savoury; the novello white wine differs in its flavour from dry to sweet; the vendemmia tardiva white wine is distinguished by its golden yellow colour; the passito white wine has a yellow colour tending towards amber depending on its ageing. The red and novello red versions have a ruby colour tending towards garnet with ageing, with a fruity perfume and a taste that ranges from dry to sweet. The rosé has a pinkish cherry colour, with a fine aroma and a dry to sweet flavour. The minimum total alcoholic strength by volume is 10.00% vol. for white, red and rosé wines; 11.00% vol. for novello white and novello red wines; 15.00% vol. for white riserva tardiva; 16.00% vol. for passito white.


Grape production area

The production area includes the administrative territory of the municipalities of Bassano in Teverina, Canepina, Capranica, Caprarola, Carbognano, Corchiano, Fabrica di Roma, Gallese, Ronciglione, Seriano nel Cimino, Sutri, Vallerano, Vasanello, Vignanello, in the province of Viterbo.


Specificity and historical notes

The cultivation of vines in Lazio has ancient origins, dating back to the Etruscans, and was also favored by advanced technical knowledge and material of various origins collected through the extensive trade relations of this people.
