Recioto di Gambellara
"Recioto di Gambellara" is a white wine with Protected Designation of Origin (PDO), which is produced in two different varieties: Classic and sparkling.
Grapes
The production takes place in purity, with the exclusive use of grapes that come from vineyards consisting of 100% Garganega vine.
Physicochemical and Organoleptic properties
"Recioto di Gambellara Classico" (14.00% vol.) has a colouring that ranges from straw yellow to golden yellow, with variations in intensity and possible amber hues. It is characterized by an intense scent, which evokes ripe fruit and can be embellished with nuances of vanilla. The taste is equally characteristic, harmonious, with a slightly bitter aftertaste and a tone that varies from sweet to sweet. If aged in barrels, it can also show hints of wood. The sparkling version (14.00% vol.), on the other hand, is straw yellow or golden in colour, with a fine and persistent foam; the aroma is intense and fruity, as is the harmonious and velvety flavour.
Grape production area
The production area consists of a hilly area that does not exceed 350 meters above sea level, interspersed with flat ridges. The soils are mainly of volcanic origin, with clayey soils.
Specificity and historical notes
The heart of the vinification of "Recioto di Gambellara" is the drying phase. It is carried out by the "picai" and entrusted to expert hands with a long tradition. The secret, in fact, is to proceed without letting the bunches come into too much contact with each other. The drying is carried out in specific places, which have very specific characteristics of humidity and ventilation (eg: attics and barns).
