Vin Santo di Carmignano

The protected designation of origin "Vin Santo di Carmignano" includes four types of wine: basic, Riserva, Occhio di Pernice, Occhio di Pernice Riserva.


Grapes

The "Vin Santo di Carmignano", even in the Riserva version, is composed for at least 75% of Trebbiano Toscano and Malvasia Bianca Lunga, absolute or combined, can then contribute grapes of white grapes, suitable for cultivation for the region of Tuscany, up to a maximum of 25%. The Occhio di Pernice version, also Riserva, is composed of a minimum of 50% Sangiovese and, for the remaining part, red or white grapes, suitable for cultivation in the Toscana region, may be used.


Physicochemical and Organoleptic properties

The basic version, also Riserva, has a minimum total alcholic strength by volume of 16%, has a color ranging from straw yellow to golden and tends to amber aging, the smell is ethereal, intense and characteristic, the flavor instead is harmonious, velvety and goes from dry to sweet. The Occhio di Pernice version, also Riserva, has a minimum total alcholic strength by volume of 16%, the colour ranges from pale pink to intense, the aroma is intense, characteristic and ethereal, the flavour is well-structured, from dry to sweet.


Grape production area

The production area of "Vin Santo di Carmignano" is medium hilly, located within the small chain of Montalbano, which from Serravalle Pistoiese reaches overhanging the Arno south of Artimino. The view over the great plain of Firenze-Pistoia favours excellent ventilation and sunshine, ideal for viticulture.


Specificity and historical notes

The winemaking tradition, in the area of "Vin Santo del Carmignano", dates back to the 14th century. The microclimate that is created, in the encounter between the middle hill and the plain, favors and imprints the wines produced in the territory of "Carmignano" a unique and recognizable character.
